Southern Hush Puppies

2 cups self-rising cornmeal
1 cup self-rising flour
1/2 tsp. salt
3 Tbsp. sugar
3 large eggs, lightly beaten
1/2 cup milk
1 1/2 cups cheddar cheese, shredded
2 jalapeno peppers, seeded and
1 (17 oz.) can cream-style corn
1 large onion, chopped

Combine first 4 ingredients in a large bowl. Combine eggs and milk; add to dry ingredients, stirring just until moistened. Stir in cheese, pepper, corn, and onion (do not over stir the batter). Carefully drop batter by rounded tablespoons into oil heated to 375 degrees. Fry a few at a time, 3 minutes or until golden brown, turning once. Drain on paper towels.

My husband, my son, and I always catch some fish a few times a year out of the farm pond and have a fish fry. And our fish fry wouldn’t be complete without these hush puppies!
