Bacon and Cheese Muffins

1 3/4 cups self-rising flour
2 Tbsp sugar
10 slices bacon, cooked and crumbled
1/2 cup sharp cheddar cheese,
shredded
1 large egg, lightly beaten
3/4 cup milk
1/3 cup canola oil

Combine first four ingredients in a large bowl. Combine egg, milk, and oil. Add to dry ingredients, stirring just until moistened. Spoon batter into well-greased muffin pan, filling 2/3 full. Bake at 400 degrees for 20 to 22 minutes or until golden. Remove from pan immediately.

You can’t go wrong with a muffin that has cheese AND bacon in it!
