Marinated Salad

Small container of spring mix lettuce
1 head of iceberg, green leaf, or
romaine lettuce
3 green onions, chopped
1 bunch broccoli, chopped
1 package ramen noodles, crushed
1 cup chopped walnuts
Do not add walnuts and ramen noodles
until ready to serve.
Dressing:
¾ cup sugar
½ cup canola oil
¼ cup low sodium soy sauce
½ cup red wine vinegar

Heat vinegar and dissolve sugar in it. Remove from heat and add the other dressing ingredients. Refrigerate and toss with salad right before serving.

My mom makes this salad for me and it’s one of my favorites. For the ramen noodles – just throw the seasoning pack away that comes with it, it’s not needed. You just crush up the uncooked noodles to add crunch to the salad.
