Mexican Chicken Casserole
4 boneless skinless chicken breast,
cooked and shredded
2 cans cream of chicken soup
1 can Rotel
1 pound Velveeta cheese, melted
1 bag Doritos, crushed
Combine all ingredients except for Doritos. Cover bottom of casserole dish with ½ of the crushed Doritos. Pour the chicken mixture in and top with remaining Doritos. Bake at 350 degrees for 30 minutes.
Yet another one that makes me think of Downtown Diner. Oh, how I miss that place.
