Apple Pie Bread
1 can apple pie filling, mashed
1 yellow cake mix
4 eggs, slightly beaten
1 cup self-rising flour
1 Tbsp. cinnamon (plus more for topping) 1 medium chopped apple
Whisk all dry ingredients then add wet ingredients. Fold in apples. Pour in two greased loaf pans. Sprinkle sugar and cinnamon on top. Bake at 325 degrees for 35 to 45 minutes. Cool on wire racks.
Melanie found this recipe online and made it for us at the office one morning for breakfast. It’s wonderful to walk in to the office and smell fresh apple bread baking! Ron and I both nominated her for the position of office chef. And we hope this bread continues to be on the menu.
