Butter Mints

1/2 package cream cheese (4 oz.)
2 Tbsp. butter
1 box powdered sugar
1/4 tsp. peppermint extract
1/8 tsp. pure vanilla extract

In a nonstick saucepan, melt cream cheese and butter. Stir in powdered sugar. Add extracts and stir. When it starts to cool and can be handled, roll into ropes and lay out on parchment paper and cut into bite size mints. Let stand for four hours. You can add food coloring with the extracts to make them colored.

Warning: When people find out you can make these, you will have to fix them for every wedding shower and baby shower that your friends and family have for the rest of your life.
