Peach Cobbler

1 ½ cups self-rising flour
½ cup shortening
½ cup milk
2 cups peaches, chopped
1 stick butter
2 cups sugar
2 cups hot water

Cut the shortening into the flour, then add milk, mix well, and roll out onto a floured surface. Spread 2 cups of chopped up peaches over dough, roll up, and slice. Melt one stick of butter in a 9×13 baking dish. Place sliced up rolls in dish and pour a mixture of 2 cups sugar dissolved in 2 cups of hot water over the rolls. Bake at 350 degrees for 45 minutes to one hour.

You can’t beat a cobbler made with fresh peaches and some ice cream served alongside it. If you make this while peaches are not in season, any fruit can be substituted. We usually have to make this at the office once a year with strawberries for Ron’s birthday.
