Chicken Salad
 

 

1 avocado
Shredded rotisserie chicken
Pecans or almonds
Sliced grapes
Salt, to taste

Anytime I am doing a Whole30 (which is basically when you don’t eat anything processed for 30 days) this is my go-to lunch at least twice a week. I have no measurements on this one because I simply throw the amount I want into a bowl. You simply mash up the avocado in a bowl and stir in some shredded rotisserie chicken, pecans or almonds (whichever you prefer), sliced grapes, and salt to taste.
