Recipe Corner



Melanie Skillman shared this recipe with me and it has become my son’s favorite. It is exactly like some caramel candy that we once bought in the Smoky Mountains. It’s super easy to make and would be great for trick or treaters in a couple of weeks! I store mine in a glass bowl and we just cut pieces off as we want it. If yours doesn’t set up enough, add 5-10 seconds to each set of cooking times the next time you make it. If yours hardens too much, decrease it by 5 or 10. I thought Melanie was crazy at first that 5 seconds was going to make that much of a difference, but it does!

Caramel Pecan Candy

1 stick butter
½ cup sugar
½ cup light brown sugar
½ cup light corn syrup
½ cup sweetened condensed milk
1 tsp. vanilla
1 cup pecan halves, toasted

In a large glass bowl, melt the butter in the microwave. Add sugars, corn syrup, and sweetened condensed milk. Mix well then microwave for 3 minutes, 5 seconds. Remove, scrape sides, and stir well. Microwave for another 3 minutes, 5 seconds. Remove and stir in vanilla and pecans. Immediately pour into a parchment paper lined glass dish. Let cool, cut into pieces.

Melanie tip: Be extremely careful with the hot candy. It is like lava and will blister skin immediately. And, yes, I found this out the hard way.
