Recipe Corner



This is great to throw together for a quick and easy weeknight meal. Add any toppings and the cheese of your choice.

Easy Nachos

1 bag tortilla chips
½ cup tomato sauce
1 lb. ground beef
1 (4 oz.) can diced mild green chilies
1 can black beans, drained and rinsed
1 pkg. low-sodium taco seasoning
2 cups shredded cheddar cheese
1 large avocado, diced
1/3 cup sour cream
1 cup salsa

Preheat oven to 375 degrees. Line a baking sheet with parchment paper or foil and spread the tortilla chips out in an even layer. Cook ground beef in a skillet and drain fat. Stir in tomato sauce, black beans, green chilies, and taco seasoning. Spoon mixture evenly over chips and sprinkle cheese on top. Bake until cheese is melted, about 5 minutes. Top with avocado, sour cream, and salsa.
