I love a good pasta salad. I don’t like cucumbers or olives so I leave them out. This is another one you can make a meal by adding rotisserie chicken.

Spring Greek Pasta Salad

4 cups veggie rotini, cooked and
drained
3 large tomatoes, seeded and chopped
1 medium sweet red pepper, chopped
1 small cucumber, seeded and
chopped
1 small zucchini, chopped
1 small red onion, diced
1/3 cup sliced pitted Greek olives
1 cup crumbled feta cheese
Vinaigrette:
¼ cup extra virgin olive oil
3 Tbsp. lemon juice
2 Tbsp. balsamic vinegar
1 Tbsp. water
½ tsp. garlic powder
1 tsp. salt
¼ tsp. pepper
1 Tbsp. dried oregano

In a small bowl, whisk together the vinaigrette ingredients. In a large bowl, combine the pasta with vegetables. Add vinaigrette and cheese; toss to combine. Cover and refrigerate until serving.
