Beer Batter

2 cups Aunt Jemima complete
pancake mix
1 bottle or can of beer
Seasoned Flour:
3 cups flour
2 tsp. salt
2 tsp. pepper
2 tsp. garlic powder

In a dish, whisk together the pancake mix and beer. Let it stand a few minutes then whisk again. In another dish, mix the seasoned flour. Dip the fish, chicken, etc., in the beer batter, then in the seasoned flour and then place in a fryer. Cook until golden brown.

My mother’s birthday was last week and I fried some red snapper with this batter for her birthday supper. It’s the best-ever, super-crunchy batter. I also realized last week that I am turning into my mother as I emptied a container of Cool Whip and talked myself into washing the container and keeping it for future use. I am trying to do better about fixing food and giving it to other people, but all I have is glass containers because I try to stay away from plastics as much as possible. So while I have laughed at my mother for years about her collection of Cool Whip bowls and how everything she sends me home with is always in one, I realized it makes sense. It’s better to reuse them and when you give someone food in one, they can just throw it away when they are done and not have to worry about returning it to you. So I encourage everyone the next time you are trying out a recipe, if you have extra, share it with someone. And if you give it to them in a Cool Whip bowl, even better.
