Jalapeno Popper Pork Loin

1 center-cut pork loin
1 tsp salt
1 tsp pepper
10 slices bacon, cooked crisp
8 oz. cream cheese, softened
1 Tbsp dry ranch seasoning
1 cup cheddar cheese, freshly
2 jalapeno peppers, seeds removed,
finely diced
1 Tbsp olive oil

Butterfly the pork loin and open it up like a book. Cover the entire cut of meat with plastic wrap and pound to an even 1/3 inch thickness. Season with salt and pepper. Top with cooked bacon strips. In a bowl, combine cream cheese and ranch seasoning. Spread the cream cheese mixture on top of the bacon. Top with shredded cheese and jalapenos. Tightly roll the pork loin to completely enclose all of the fillings. Secure tightly with cooking twine. In an oven safe skillet, heat the olive oil and sear the pork on all four sides. Transfer the skillet to the oven and cook for 25-30 minutes at 450º.
