Zucchini Tomato Bake

3 medium zucchini, chopped
1 pint cherry tomatoes, halved
2 cloves garlic, minced
Extra-virgin olive oil for drizzling
Salt and pepper
1/3 cup grated Parmesan cheese
2 Tbsp. chopped fresh basil

Preheat oven to 350 degrees. In a large bowl combine zucchini, tomatoes, garlic, and a drizzle of olive oil. Season with salt and pepper and toss to coat. Transfer vegetables to a baking dish, sprinkle with Parmesan cheese, and bake until golden, around 35 minutes. Garnish with basil.

To keep this dish from being too watery, you might want to press some of the juice out of the tomatoes with a paper towel before adding them.
