German Chocolate Upside Down Cake

1 cup shredded coconut
1 cup pecans, chopped
1 box German chocolate cake mix
1 stick margarine
1 8-oz cream cheese, softened
16-oz confectioner’s sugar

Combine the coconut and nuts and put in the bottom of a greased 9 x 13 inch pan.

Prepare cake mix according to box directions. Pour this over the coconut-pecan mixture.

Place margarine and cream cheese in a saucepan and heat until mixture is warm enough to stir in the confectioner’s sugar. Mix well and spoon over the top of the cake mix.

Bake at 350 degrees for 35 to 40 minutes. Do not cut until cooled.

NOTE: In spite of the name, this cake cannot be inverted onto a platter because the sticky bottom that makes it so delicious also makes it stick to the pan. The individual pieces, however, can be served upside down.
Artichoke Dip

2 14- to 16-oz cans artichoke hearts
1 cup Hellman’s mayonnaise
1 cup shredded Parmesan cheese
Dash of garlic

Separate leaves and mix together all ingredients. Put into open dish and heat for 30 minutes at 350 degrees. Place on warmer and serve with crackers.
Barbecue Meatballs

2 lbs. ground beef
2 eggs
1/2 tsp. garlic salt
1 small onion, chopped
1 cup milk
1.5 cups quick oats or cracker crumbs
2 Tbsp. chili powder

Combine beef, eggs, garlic salt, onion, milk, oats, and chili powder. Make into small balls and place in casserole dish and pour sauce over all. Do not brown meatballs. Bake at 300 degrees for 50 minutes.
Sauce for Barbecue Meatballs
2 cups ketchup
2 T. liquid smoke
1/4 onion, chopped
1.5 cups light brown sugar
1/2 tsp. garlic salt
Mix ketchup, liquid smoke, onion, sugar, and salt. Bring to a boil and pour over meatballs.
