1 package freeze dried strawberries,
blended to a powder
1 cup butter, softened
4 cups powdered sugar
3 Tbsp heavy cream
1 tsp vanilla
Process strawberries into a powder. With a mixer, combine the butter, powdered sugar, strawberry powder, and heavy cream until creamy. Add vanilla.
I pull my heart-shaped cake pan out once a year to make a strawberry cake for my son for Valentine’s Day. While I don’t have time to make my cakes from scratch (I just use a box mix), I ALWAYS make homemade icing. I am not a believer in canned icing, sorry. After many trial and error recipes for a great strawberry buttercream icing, I finally got it right. If you purchase the freeze dried strawberries at the big box chain store that we all hate going to, you will find it in the produce section on the stand that’s beside the bananas. I use a mini chopper to turn the strawberries into a powder, but you can use a blender or whatever you have that will powder them.
