Grilled Corn Guacamole
4 ears fresh corn
4 Tbsp canola oil
salt and pepper
3 ripe avocados, peeled, pitted,
1 jalapeno pepper, seeds removed,
1 small red onion, finely diced
1 lime, juiced
2 Tbsp dried cilantro
Remove the husks from the corn, brush the ears with 2 tablespoons of the oil, and season with salt and pepper. Grill the ears until the kernels are lightly golden brown on all sides. Remove the kernels from the ears. Place the avocados in a medium bowl and mash with a fork. Add the corn, jalapeno, onion, lime juice, remaining 2 tablespoons of oil, cilantro, and salt and pepper to taste. Stir to combine. Serve with tortilla chips.
I love guacamole so much that I can eat it as my meal. I’m always looking for different variations to make.
